Hello Beloved! Here we are with recipe #4 in our 13 week series of healthy, delicious, no frills meals to help you build and sustain your temple. This week's recipe is a refreshing pineapple salad.
This is one of our favorite go to recipes when pineapples are in season. The combination of mint, ginger and pineapple make a satisfying and refreshing snack or dessert. We eat, are grateful and invigorated. As you enjoy this week's recipe, we invite you to consider the ways in which God may be calling you to be refreshed from the inside out. Refreshed in perspective, in spiritual insight and strength. Think on and pray the following scripture as you prepare and enjoy this week's recipe:

Total calories = 416 kcals, Serves 4 (83 kcals per serving)
5 cups Pineapple, cut into cubes
1 tsp Lime Juice, fresh
1 tbsp Ginger Root, fresh, grated
2 tbsp Peppermint Leaves, fresh, chopped
1) In a large mixing bowl toss all ingredients, until the ingredients appear to be evenly distributed.
2) To serve, spoon 1 cup of pineapple salad into each of four glasses or dessert bowls; garnish with mint sprigs.
